M's Superfood Wrap

Lunch, Main Dish • Dairy Free, Meatless

Ingredients

  • 1 wrap (I like spinach)
  • 1/3 to 1/2 cup quinoa cooked
  • 1/3 cup spicy hummus (I like jalapeño and cilantro hummus)
  • 1/2 avocado mashed (or 1 single serve container of guacamole)
  • 1 chipotle black bean burger patty cooked and crumbled
  • 6 roasted red pepper or fresh red bell pepper strips (optional)

Directions

  • 1. spread the hummus and the guacamole or mashed avocado over the center of the wrap, top with quinoa, then the crumbled black bean patty and then the peppers if using. roll it up and eat!
