Spinach tomato dal

Main Dish • Lentils, Spinach

Ingredients

  • • 1 cup of red lentils
  • 2 handfuls of fresh spinach (or 2
  • cubes of frozen spinach)
  • •2 handfuls of cherry tomatoes
  • -1 stock cube
  • • 1 tablespoon garam masala
  • • 2 cups of cold water

Directions

  • 1. Combine Ingredients:
  • Add all the ingredients (red lentils, spinach, cherry tomatoes, stock cube, garam masala, and water) to a
  • saucepan.
  • 2. Simmer:
  • Place the saucepan over low heat and simmer for 20 minutes. Stir occasionally to prevent the lentils from sticking to the bottom.
  • If the mixture starts to dry out, add a little extra cold water to maintain
  • consistency.
  • 3. Thicken:
  • After 20 minutes, turn off the heat and let the dhal sit for a few minutes to thicken up.
  • 4. Serve:
  • Spoon the dhal into bowls.
  • Optional: Add a wedge of lemon, some fresh herbs, and chili flakes for extra flavor.
  • Serve with crusty bread on the side for a complete meal.
