Spinach tomato dal

Ingredients
- • 1 cup of red lentils
- 2 handfuls of fresh spinach (or 2
- cubes of frozen spinach)
- •2 handfuls of cherry tomatoes
- -1 stock cube
- • 1 tablespoon garam masala
- • 2 cups of cold water
Directions
- 1. Combine Ingredients:
- Add all the ingredients (red lentils, spinach, cherry tomatoes, stock cube, garam masala, and water) to a
- saucepan.
- 2. Simmer:
- Place the saucepan over low heat and simmer for 20 minutes. Stir occasionally to prevent the lentils from sticking to the bottom.
- If the mixture starts to dry out, add a little extra cold water to maintain
- consistency.
- 3. Thicken:
- After 20 minutes, turn off the heat and let the dhal sit for a few minutes to thicken up.
- 4. Serve:
- Spoon the dhal into bowls.
- Optional: Add a wedge of lemon, some fresh herbs, and chili flakes for extra flavor.
- Serve with crusty bread on the side for a complete meal.
