Ingredients
- 1 lb beef stew meat, cubed
- 2 tbsp extra virgin olive oil
- 1 large onion, diced
- 2 carrots, peeled and sliced into 1/2-inch rounds
- 2 potatoes, peeled and cubed into 1-inch pieces
- 4 cups beef broth
- 1 tsp ground cumin toast it lightly for maximum aroma
- 1/2 tsp turmeric
- Salt and black pepper to taste
- Fresh cilantro for garnish a handful chopped fine
Directions
- Heat 2 tbsp extra virgin olive oil in a large pot over medium-high heat until it shimmers, about 2 minutes.
- Add 1 lb beef stew meat and sear for 4-5 minutes, turning occasionally, until browned on all sides for deeper flavor.
- Stir in 1 large diced onion and cook for 3-4 minutes until softened and translucent.
- Sprinkle in 1 tsp ground cumin and 1/2 tsp turmeric, toasting for 30 seconds until fragrant to unlock their oils.
- Pour in 4 cups beef broth, scraping the bottom of the pot to deglaze and incorporate any browned bits.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45 minutes to tenderize the beef.
- Add 2 sliced carrots and 2 cubed potatoes, simmering uncovered for another 20 minutes until vegetables are fork-tender.
- Season with salt and black pepper to taste, stirring gently to avoid breaking up the vegetables.
- Ladle the soup into bowls and garnish with fresh chopped cilantro for a fresh finish.
