MAKING A SOURDOUGH STARTER FROM SCRATCH

Ingredients
- What You’ll Need
- Flour — unbleached all-purpose, bread flour, or whole-grain flour
- Room-temperature filtered water
- A clean glass jar
- Spoon or spatula
Directions
- DAY 1
- Combine ½ cup flour with ¼ cup water in a clean glass jar.
- Stir thoroughly until no dry flour remains. The mixture should resemble a thick batter; add a little more water if necessary.
- Cover the jar loosely—do not seal airtight.
- Leave at room temperature for 24 hours.
- DAY 2 AND BEYOND
- Remove and discard approximately half of the starter.
- Add another ½ cup flour and ¼ cup water.
- Stir well, cover loosely, and leave at room temperature for another 24 hours.
- Repeat this feeding process every day.
- WATCH FOR LIFE/ACTIVITY!
- Over the next several days, naturally occurring wild yeasts and lactic-acid bacteria will begin establishing themselves in the starter.
- Look for:
- Bubbles throughout the mixture
- A pleasantly tangy or yeasty aroma
- Increasing expansion after each feeding
- It may become very bubbly early on and then seem to quiet down for a few days. Keep feeding it! This is normal while the microbial community becomes established.
- WHEN IS IT READY?
- Most starters become established in approximately 7–14 days, although some take longer.
- The starter is ready for bread-making when it reliably becomes bubbly and approximately doubles in volume within several hours after feeding.
- ONCE IT’S ESTABLISHED
- If baking frequently, the starter can remain at room temperature with regular feedings.
- If baking about once a week, store it in the refrigerator. Before baking, take it out, feed it, and allow it to become active, bubbly, and expanded again.
- Use the amount your recipe calls for—and always save some starter for next time!

- Flour + Water + Naturally Occurring Microbes + Time = Sourdough Starter
- Once established and properly cared for, the same living starter can potentially be kept going for years—even generations!
