Kimchi Fried Rice (Complex)

Main Dish • Kimchi, Korean, Rice, Vegetarian
Serving size: 2 people + leftovers

Ingredients

  • 1 Go Rice (cooked and cooled; day before is best)
  • Cooking Oil
  • 1 White Onion, Diced
  • 1 Clove Garlic, Minced
  • 1 Medium Carrot, Sliced Thinly
  • 200g Firm Tofu, Diced
  • 3 Vegan Sausages, Sliced (Optional)
  • 1 Cup Firmly Packed Kimchi, Roughly Chopped
  • Sauce:
  • 2 Tbsp Kimchi Liquid
  • 1 Tbsp Gochujang, dissolved in 1 Tbsp Boiling Water
  • 1 Tbsp Soy Sauce
  • To Serve:
  • Drizzle of Sesame Oil
  • Sliced Scallions
  • Toasted Sesame Seeds
  • Seaweed Sheets

Directions

  • 1. Mix the sauce and set aside.
  • 2. Heat the oil in a wok and add the onion, garlic, carrot, tofu and vegan sausages. Fry until lightly browned. Add kimchi and cook 1 more minute.
  • 3. Add the sauce and rice, toss to coat, cook 2 minutes. Drizzle with sesame oil and turn off the heat.
  • 4. Serve and garnish
