Kimchi Fried Rice (Complex)

Serving size: 2 people + leftovers
Ingredients
- 1 Go Rice (cooked and cooled; day before is best)
- Cooking Oil
- 1 White Onion, Diced
- 1 Clove Garlic, Minced
- 1 Medium Carrot, Sliced Thinly
- 200g Firm Tofu, Diced
- 3 Vegan Sausages, Sliced (Optional)
- 1 Cup Firmly Packed Kimchi, Roughly Chopped
- Sauce:
- 2 Tbsp Kimchi Liquid
- 1 Tbsp Gochujang, dissolved in 1 Tbsp Boiling Water
- 1 Tbsp Soy Sauce
- To Serve:
- Drizzle of Sesame Oil
- Sliced Scallions
- Toasted Sesame Seeds
- Seaweed Sheets
Directions
- 1. Mix the sauce and set aside.
- 2. Heat the oil in a wok and add the onion, garlic, carrot, tofu and vegan sausages. Fry until lightly browned. Add kimchi and cook 1 more minute.
- 3. Add the sauce and rice, toss to coat, cook 2 minutes. Drizzle with sesame oil and turn off the heat.
- 4. Serve and garnish
