Balsamic Glazed Roasted Carrots

Ingredients
- 1 lbs carrots, peeled and cut into sticks or left whole if thin
- 1½ tablespoons olive oil
- Salt and black pepper to taste
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh thyme leaves optional
Directions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, toss carrots with olive oil, salt, and pepper. Spread them out evenly on the prepared baking sheet.
- Roast for 20–25 minutes, turning halfway, until tender and slightly caramelized.
- While the carrots roast, mix balsamic vinegar and honey in a small bowl.
- In the last 5 minutes of roasting, drizzle the balsamic mixture over the carrots and toss to coat. Return to the oven until glossy and sticky.
- Sprinkle with fresh thyme if desired and serve warm.
