Ingredients
- 1 cup red lentils
- 3 cups water
- 3 stalks celery
- 2 carrots (grated)
- ground black pepper
- 2 tblsp miso
- 1-2 onions
- nutmeg
- 1-2 bouillon cubes (opt)
Directions
- Bring the water to a boil in a soup pot and add the red lentils. Reduce heat and simmer until the lentils are soft (about 20 minutes).
- Chop and sauté onions and celery.
- Add the onions, celery, grated carrots, a pinch of nutmeg, the bouillon cubes if you wish or the miso and a little ground black pepper. Simmer for a few minutes.
- Adjust seasoning and add more water if too thick.
- Add a few TOFU CROUTONS and serve.
