FAVORITE Carrot Lentil Soup (Chloe’s Kitchen)

Soup/Stew • Carrot, Lentils
Serving size: 6
Cook time: 20 mins

Ingredients

  • 1 cup red lentils
  • 3 cups water
  • 3 stalks celery
  • 2 carrots (grated)
  • ground black pepper
  • 2 tblsp miso
  • 1-2 onions
  • nutmeg
  • 1-2 bouillon cubes (opt)

Directions

  • Bring the water to a boil in a soup pot and add the red lentils. Reduce heat and simmer until the lentils are soft (about 20 minutes).
  • Chop and sauté onions and celery.
  • Add the onions, celery, grated carrots, a pinch of nutmeg, the bouillon cubes if you wish or the miso and a little ground black pepper. Simmer for a few minutes.
  • Adjust seasoning and add more water if too thick.
  • Add a few TOFU CROUTONS and serve.
