Pork Tenderloin Udon Stir Fry

Ingredients
- 1 lb pork tenderloin, sliced into thin strips
- 200g udon noodles
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1-inch piece of fresh ginger, grated
- 1 medium gray squash, sliced
- 2 medium carrots, peeled and grated
- Custom sauce
- Custom Sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 tsp garlic, minced
- 1/4 tsp red pepper flakes optional
Directions
- Cook udon noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat 1 tbsp of oil over medium-high heat. Add pork and cook until browned, about 3-4 minutes. Remove from skillet and set aside.
- In the same skillet, add another tbsp of oil if needed. Add onion, garlic, and ginger. Cook until onion is translucent.
- Add gray squash and carrots to the skillet. Cook until tender-crisp, about 3-4 minutes.
- Add cooked pork back into the skillet. Pour in custom sauce and stir to combine.
- Add cooked udon noodles to the skillet. Stir-fry everything together until noodles are well coated with sauce.
- Serve hot, garnished with green onions or sesame seeds if desired.
Notes
- Use a high-heat oil like avocado or peanut oil for stir-frying.
- Adjust the amount of red pepper flakes in the custom sauce to your desired level of spiciness.
- Add other vegetables like bell peppers or mushrooms to the stir-fry if you like.
