Lemon & Garlic Orzo Chicken

Ingredients
- Chicken Thighs
- Parmesan
- Marinade:
- 1/3 cup of plain Greek yogurt
- 4 tbsp Olive Oil
- 2 lemons, squeezed
- 3 cloves of garlic, minced
- Oregano flakes
- S&P
- Orzo:
- 1 cup of dry orzo
- 1 tbsp butter
- 1 shallot
- 2 cloves garlic, minced
- 1 lemon, squeezed and zest
- 1 box of Kettle and Fire chicken bone broth
- Oregano flakes
- 1 can of English peas, drained
Directions
- Need: 15” cast iron skillet
- 1. Marinate chicken in marinade and let set at least 30 minutes. Can do over night as well to have this step done.
- 2. Cook chicken 90% in cast iron skillet, discard rest of marinade. Let chicken brown on both sides. Set chicken aside
- 3. Put in butter and shallots and let cook a few minutes. Add in orzo and let brown a few minutes. Then add in rest of orzo ingredients.
- 4. Cover and let cook 25 minutes, stir occasionally so it doesn’t burn. Enjoy!!!
