Spicy Chicken Bhuna

Ingredients
- 500g chicken thighs, boneless, skinless, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, pureed
- 1 tablespoon garam masala
- 1 tablespoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon cumin powder
- 1/2 teaspoon chili powder
- Salt to taste
- Fresh coriander, chopped for garnish
- 1/2 cup water adjust for desired consistency
- 1 tablespoon lemon juice
Directions
- Heat the vegetable oil in a large pan over medium heat. Add the onions and sauté until golden brown, about 5-7 minutes.
- Add the garlic and ginger to the pan and cook for another 2 minutes until fragrant.
- Add the pureed tomatoes to the pan and cook, stirring occasionally, until the oil starts to separate from the mixture (about 10 minutes).
- Stir in the garam masala, ground coriander, turmeric, cumin powder, and chili powder. Cook for 2 minutes to release the flavors.
- Add the chicken pieces to the pan, season with salt, and stir to coat the chicken with the spice mix. Cook for about 5 minutes.
- Pour in the water, cover the pan, and simmer for 25-30 minutes or until the chicken is cooked through and tender.
- Stir in the lemon juice and adjust seasoning to taste.
- Garnish with freshly chopped coriander and serve hot with naan or rice.
