Ingredients

  • 500g chicken thighs, boneless, skinless, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, pureed
  • 1 tablespoon garam masala
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Fresh coriander, chopped for garnish
  • 1/2 cup water adjust for desired consistency
  • 1 tablespoon lemon juice

Directions

  • Heat the vegetable oil in a large pan over medium heat. Add the onions and sauté until golden brown, about 5-7 minutes.
  • Add the garlic and ginger to the pan and cook for another 2 minutes until fragrant.
  • Add the pureed tomatoes to the pan and cook, stirring occasionally, until the oil starts to separate from the mixture (about 10 minutes).
  • Stir in the garam masala, ground coriander, turmeric, cumin powder, and chili powder. Cook for 2 minutes to release the flavors.
  • Add the chicken pieces to the pan, season with salt, and stir to coat the chicken with the spice mix. Cook for about 5 minutes.
  • Pour in the water, cover the pan, and simmer for 25-30 minutes or until the chicken is cooked through and tender.
  • Stir in the lemon juice and adjust seasoning to taste.
  • Garnish with freshly chopped coriander and serve hot with naan or rice.
