Camarão à Moçambicana - Shrimp Mozambique

Ingredients
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 1 cup coconut milk
- 1/4 cup white wine
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon Spanish paprika
- 1/2 teaspoon cayenne pepper or to taste
- kosher salt and pepper to taste
- Fresh cilantro, chopped for garnish
- Cooked rice or crusty bread for serving
Directions
- Heat olive oil in a large skillet over medium heat. Add garlic and onions; cook until softened 3-4 minutes.
- Add shrimp to the skillet; cook until pink and partially cooked 2-3 minutes.
- Add cumin, smoked paprika, and cayenne pepper; stir to combine.
- Pour in coconut milk and white wine (if using). Stir to combine.
- Reduce heat to low; simmer until the sauce thickens and shrimp are fully cooked 5-7 minutes.
- Add salt and pepper to taste.
- Garnish with chopped cilantro. Serve with cooked rice or crusty bread.
