Egg Casserole

Ingredients
- 1 cup bisquick baking mix
- 1 1/2 cups cottage cheese
- 1/2 pound (2 cups) grated cheddar cheese
- 2 teaspoons chopped onion
- 1 teaspoon dried parsley flakes
- 1/4 teaspoon salt
- 6 eggs, slightly beaten
- 1 cup milk
- 1/2 cup small ham chunks
Directions
- 1. Mix bisquick.
- 2. Mix in order given.
- 3. Pour in buttered 9 X 13 inch pan.
- 4. Bake 40 minutes in 350 degree oven.
- 1/2 batch:
- 1/2 cup bisquick baking mix
- 3/4 cup cottage cheese
- 1 cup grated cheddar cheese
- 1 teaspoon onion
- 1/2 teaspoon dried parsley flakes
- 1/8 teaspoon salt
- 3 eggs, slightly beaten
- 1/2 cup milk
- 1/4 cup ham chunks.
- Bake in a 8" square pan.
- Serves 9.
- 1/3 of a batch:
- 1/3 cup bisquick baking mix
- 1/2 cup cottage cheese
- 2/3 cup grated cheddar cheese
- 2/3 teaspoon chopped onion
- 1/3 teaspoon dried parsley flakes
- pinch of salt
- 2 eggs, slightly beaten
- 1/3 cup milk
- 2 tablespoons ham chunks.
- Bake in a loaf pan.
- Serves 2 or3.
- I add 3 strips of chopped, cooked bacon and 1/2 pound of browned sausage to the original casserole. Yummy!
Notes
- If you don’t have bisquick, a substitute is 1 cup flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt and 1 Tablespoon coconut oil or butter.
- Gluten free bisquick is an easy one to one substitute. Does not change flavor or consistency.
