Chicken and Broccoli Dinner in Foil

Ingredients
- 1/2 cup prepared stuffing mix such as Stovetop
- 1 boneless skinless chicken breast (thawed if frozen)
- 1/3 to 1/2 cup fresh broccoli florets
- 1/4 cup shredded cheddar cheese
- 1 tablespoon real bacon bits
- 1 tablespoon ranch dressing
Directions
- Preheat oven to 400.
- Spray 1 large sheet of heavy-duty foil with olive oil or cooking oil spray.
- On the piece foil place..
- 1/2 cup of the stuffing mixture onto the center of each foil sheet.
- Top stuffing with 1 chicken breast half.
- Top chicken with 1/2 cup broccoli.
- Sprinkle with 1/4 cup of the cheese and 1 tablespoon of the bacon bits.
- Drizzle with 1 tablespoon ranch dressing
- Bring up foil sides and fold to seal, leaving room for heat circulation inside
- Place packets on a cookie sheet and bake 25-30 mins
- Remove packets and let stand 5 mins
- Cut sits in foil for steam before opening.

Notes
- this turned out really Good! I sprayed foil, and the stuffing still stuck a bit. any flavor stuffing will work. We used turkey cause that is what we had on hand. now some diced potatoes would also be great, but season them with salt and pepper first. Since this only has to cook for 30 minutes. the potatoes will need to be cut very small or they won't be done.
- For Homemade ranch this is the recipe I use. Very similar to hidden valley (better actually)
- Buttermilk Ranch Dressing/dip
- 1/8 Recipe: Makes 8 ounces
- ¼ cup buttermilk
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 ½ teaspoons dry parsley flakes
- ¼ teaspoon black pepper
- 1/3 teaspoon onion powder
- 1/3 teaspoon garlic powder
- 1/3 teaspoon kosher or sea salt
- Steps
- Combine all ingredients and refrigerate. Makes a lot but stores well chilled for a few weeks. Use for salads or any other recipes requiring a ranch dressing.
