Susan’s Bok Choy Burrito Bowl

Ingredients

  • 1 t. Avocado oil
  • 1 Lb. grass fed ground beef
  • 1/2 C. Chicken Broth
  • 1/4 C. No sugar added salsa
  • 1/4 C. Tomato paste
  • 1 T. Taco Seasoning (make it or find one with no sugar or added chemicals)
  • 1 bunch Bok Choy
  • 1 head cabbage
  • 1 T. Bacon fat
  • 1 red onion
  • Guacamole

Directions

  • 1. Warm avocado oil in  skillet over medium heat, then add ground beef, breaking it up as it cooks until no longer pink. Add the broth, salsa, tomato paste, and taco seasoning and stir to combine.
  • 2. Reduce heat and simmer about 10 mins until liquid has reduced.
  • 3. Meanwhile, finely slice the Bok Choy and cabbage and red onion and rinse.
  • 4. Heat bacon fat over low to medium heat. Add the vegetables and a pinch of salt and pepper and cook for about 10 minutes, stirring occasionally, until tender.
  • 5. Serve the veggies topped with the ground beef mixture and guacamole. Garnish with Cilantro.
