Gnocchi al Pomodoro

Main Dish, Side Dish • Potatoes, Sauce

Ingredients

  • Gnocchi store-bought or homemade: 1 lb
  • Crushed tomatoes: 1 can (14 oz / 400 g)
  • Onion: 1 small, diced
  • Garlic: 2 cloves, minced
  • Olive oil: 2 tbsp
  • Basil: a handful, fresh
  • Salt and black pepper: to taste

Directions

  • Heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until softened. Stir in crushed tomatoes and simmer for 15-20 minutes. Season with salt and pepper.
  • Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.
  • Toss the cooked gnocchi with the tomato sauce and fresh basil leaves.
  • Plate the gnocchi and sprinkle with Parmesan for extra flavor.
