Ratatouille

Ingredients
- 2 lb tomatoes
- 1/2 cup olive oil
- 2 onions sliced
- 2 red bell peppers cut into chunks
- 1 yellow bell pepper cut into chunks
- (1 large eggplant cut into chunks)
- 2 zucchini sliced
- 4 garlic cloves, crushed
- 2 bay leaves
- 1 tbsp fresh thyme
- Salt and black pepper
Directions
- 1. Chop tomatoes
- 2. Sauté onions for 5 minutes in a bit of oil. Add peppers and sauté for 2 minutes, add zucchini and sauté for 3 minutes.
- 3. Add tomatoes and garlic with bay leaves and salt and pepper. Cook until tomatoes are pulpy.
- 4. If you feel like it, you can add some mussels to it at the end.
