Ratatouille

Ingredients

  • 2 lb tomatoes
  • 1/2 cup olive oil
  • 2 onions sliced
  • 2 red bell peppers cut into chunks
  • 1 yellow bell pepper cut into chunks
  • (1 large eggplant cut into chunks)
  • 2 zucchini sliced
  • 4 garlic cloves, crushed
  • 2 bay leaves
  • 1 tbsp fresh thyme
  • Salt and black pepper

Directions

  • 1. Chop tomatoes
  • 2. Sauté onions for 5 minutes in a bit of oil. Add peppers and sauté for 2 minutes, add zucchini and sauté for 3 minutes.
  • 3. Add tomatoes and garlic with bay leaves and salt and pepper. Cook until tomatoes are pulpy.
  • 4. If you feel like it, you can add some mussels to it at the end.
