Ingredients

  • • 1 Zwiebel
  • • 2 Möhren
  • • 1 Paprikaschote
  • • ½ Spitzkohl
  • • 1 TL Kreuzkümmelpulver
  • • 1 TL Cayennepfeffer
  • • 1 EL Senf
  • • 1 TL Paprikapulver (edelsüß)
  • • 1 Pck. passierte Tomaten (ca. 500 g)
  • • 250 ml Gemüsebrühe
  • • 4 EL (crunchy) Erdnussbutter
  • • 1 Dose Kidneybohnen
  • • 1 Dose Mais
  • • Salz und Pfeffer

Directions

  • 1. Zwiebeln und Möhren schälen und kleinschneiden.
  • 2. Paprikaschote und Spitzkohl putzen. Paprika in kleine Würfel schneiden. Den längshalbierten Spitzkohl vierteln und in schmale Streifen schneiden.
  • 3. Alles in die Pfanne geben und 5 Minuten unter ständigem Rühren andünsten.
  • 4. Kreuzkümmel, Cayennepfeffer, Paprikapulver und Senf dazugeben und 1 Minute mitbraten.
  • 5. Passierte Tomaten und Brühe hinzugeben und 8 Minuten kochen lassen. Erdnussbutter hinzugeben und alles ständig durchrühren, denn die Erdnussbutter brennt schnell an.
  • 6. Kidneybohnen in ein Sieb geben und abspülen. Mais ins gleiche Sieb abgießen. Dann hinzugeben.
  • 7. Mit Salz und Pfeffer abschmecken. Dazu schmeckt Couscous sehr lecker!
