Ingredients

  • 2 eggs
  • 1/2 teaspoon pepper
  • 1 cup milk, (1 to 1 1/2)
  • 3 tablespoons parsley
  • 1 cup bread crumbs
  • 3 pounds ground sirloin
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1 can mushroom soup, Golden
  • 1/8 teaspoon thyme
  • 2 cups beef stock
  • 1 bay leaf
  • 8 ounces stewed tomatoes
  • 1 pounds carrots, cut into chunks (1 to 2)
  • 1/2 teaspoon basil
  • 6 potatoes, peeled and cubed
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 1/4 cup flour

Directions

  • Meatballs:Mix first 7 ingredients together. Form into balls. Brown in the butter. Remove and drain.Sauce:Add the other ingredients (except water and flour) to a large stock pot. Bring to a boil. Add meatballs. Cover. Simmer 20 minutes until done. Stir occasionally. Blend water and flour and add to sauce to thicken it before serving.
