Amy’s Favorite Fried Chicken

Ingredients
- 2 (6-ounce) boneless, skinless chicken breasts
- 1 tablespoon chili powder (can omit if you don’t like spicy)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon redmonds seasoned salt
- 3/4 cup of pork Panko (can use crushed Pork Rinds)
- 1/4 cup Parmesan cheese
- 1 egg
- Avocado oil
Directions
- 1. Slice each chicken breast in half lengthwise.
- 2. In a small bowl, mix chili powder, cumin,
- onion powder, garlic powder, seasoned salt, and pepper. Sprinkle over chicken.
- 3. Coat each piece of chicken with egg.
- 4. Place the ground pork rinds and Parmesan into a large bowl and mix. dip each piece of chicken into the bowl, coating as much as possible. Place chicken into the air fryer basket.
- 5. Adjust the temperature to 350°F and set the timer for 25 minutes.
- 6. Halfway through the cooking time, carefully flip the chicken.
- 7. When done, internal temperature will be at least 165°F and pork rind coating will be dark golden brown. Serve warm.
Notes
- If you do not have an air fryer you can bake these in the oven or broil them.
