Cat Cora's Lamb Chops

Ingredients
- 8 4 ounce lamb chops
- ¼ cup extra virgin olive oil
- 2 teaspoons minced garlic
- 1 tablespoon finely chopped Fresh rosemary leaves
- 1 lemon, halved
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Directions
- 1. Preheat a hot grill and the oven to 400 degrees F.
- 2. Rub the chops with lemon, drizzle with oil, and sprinkle with garlic, rosemary, salt, and pepper. Place on the grill and cook for 4 minutes on each side.
- 3. Put on a baking sheet and finish in the oven, about 5 minutes, or until desired doneness.
Notes
- These were GREAT, I put about 1 cup of dry red wine in the same pan after removing the lamb chops. Added a 2 inch sprig of fresh rosemary and a pinch of salt and pepper; let reduce about ¾ and add 1 tablespoon unsalted butter. GREAT on the lamb.
