Ingredients
- 2 slices bread (sourdough, white, or brioche all work)
- 2–3 slices bacon
- 2–3 slices cheese cheddar + mozzarella combo melts beautifully
- 1–2 tbsp butter, softened
- Optional add-ins:
- Tomato slices
- Caramelized onions
- A smear of mayo or mustard
- A drizzle of hot honey
Directions
- Cook the bacon
- Fry until crispy.
- Place on paper towels to drain.
- Prep the bread
- Spread butter on one side of each slice.
- You can also spread a thin layer of mayo on the inside (helps melt and adds flavor).
- Build the sandwich
- In a pan over medium heat, place the first slice butter-side down.
- Add:
- Cheese slice(s)
- Bacon
- More cheese on top (this helps everything stick)
- Close with second slice, butter-side up.
- Cook 2–4 minutes per side.
- Press gently with a spatula for even browning.
- The bread should be golden and the cheese fully melted.
- Let the sandwich sit 1 minute before cutting — this keeps the cheese from spilling out.
- Slice diagonally (mandatory).
