Easy Cheesy Beef Queso Fiesta

Ingredients
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup cream cheese, cubed
- 2 cups shredded cheddar cheese
- 1/2 cup milk
- 1 tablespoon chopped fresh cilantro (optional)
- Tortilla chips or fresh veggies for serving
Directions
- In a large skillet over medium heat, cook the ground beef until it's nicely browned, using a spatula to crumble it as it cooks. Once browned, if there's excess fat, drain it off. Sprinkle in the taco seasoning, stirring to coat the beef evenly. Next, pour in the diced tomatoes, along with their juices, and add the cream cheese cubes. Stir everything together until the cream cheese begins to melt. Gradually add the shredded cheddar cheese and milk, mixing continuously until the cheeses have completely melted and the mixture is smooth and creamy. For a fresh and herby touch, garnish with chopped cilantro if you like. Serve warm with a side of tortilla chips or fresh veggies for dipping and enjoy the fiesta of flavors
