Chickennat - Ugandan Chicken Stew

Ingredients
- 1 1/2 pounds boneless, skinless chicken thighs or pieces (you can use chicken breast, legs, or a combination)
- 2 medium onions, chopped
- 3 cloves of garlic, minced
- 1 medium tomato, diced
- 1 tablespoon grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cayenne pepper (optional, adjust to taste)
- Salt and black pepper, to taste
- 2 tablespoons vegetable oil or ghee
- 2 cups chicken broth or water
- Fresh cilantro or parsley, chopped (for garnish)
Directions
- Heat oil in a pan: Heat oil or ghee in a large pan over medium heat.
- Sauté onions: Add chopped onions and sauté until they're golden brown.
- Add garlic and ginger: Add minced garlic and grated ginger. Cook for 1 minute, stirring constantly.
- Add chicken: Add the chicken pieces and cook until they're browned on all sides.
- Add spices: Add cumin, coriander, turmeric, cayenne pepper (if using), salt, and black pepper. Stir well.
- Add tomato: Add the diced tomato and stir well.
- Add broth: Add the chicken broth or water. Bring to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes or until the chicken is cooked through.
- Taste and adjust: Taste and adjust the seasoning as needed.
- Serve: Serve hot, garnished with chopped cilantro or parsley.
Notes
- Traditional Ugandan Serving Suggestions:
- Matoke: Serve with steamed or boiled green bananas (matoke) for a traditional Ugandan meal.
- Rice or Chapati: Serve with rice, chapati, or any other flatbread for a more filling meal.
- Vegetables: Add your favorite vegetables, such as carrots, potatoes, or peas, to make the stew more substantial.
- Variations:
- Add peanuts or peanut paste: For added richness and flavor, you can add peanuts or peanut paste to the stew.
- Use different protein: You can also use beef, goat meat, or lamb instead of chicken.
