Sourdough Discard Sandwich Bread

Ingredients
- Make 2 loaves of bread
- 236g Water
- 21g Honey
- 9g Dry yeast
- 57g butter
- 560g plain flour
- 8g salt
- 285g Sourdough discard
Directions
- 1 Whisk together warm water, honey, and yeast. Allow it to sit at room temperature for about 5 minutes. The mixture should get nice and bubbly.
- 2 To a bowl of a stand mixer with dough hook attachment, add water yeast mixture, butter, flour, salt, and sourdough discard.
- 3 knead dough adding flour till it’s not sticky
- 4 put dough in floured silicone mould and put it in the slow cooker covered with a damp tea towel and then the lid for 15 - 30 minutes until the dough has doubled in size
- 5 Shape loaf and put in loaf tin
- 6. Bake in oven for 45 minutes or until the top is golden brown at Gas Mark 5 or 190c
