Ingredients

  • Kidneybeans (gedroogd)
  • ui
  • knoflook
  • wortel
  • bleekselderij
  • rode paprika
  • olijfolie
  • paprikapoeder gerookt
  • vadauvan
  • uienpoeder
  • tomatenpuree
  • Nduja (een theelepel)
  • blokje runderbouillon
  • verse witte kaas (type feta)
  • geraspte Parmezan
  • tortilla's van het merk Santa Maria (corn and wheat)

Directions

  • Bonen 12 tot 24 weken, spoelen en koken met zout en laurier. Ik gebruik hiervoor het bonenprogramma van de Crockpot multicooker = 20 minuten.
  • Ui, wortel en bleekselderij in blokjes snijden en goed aanfruiten in olijfolie.
  • Paprika in blokjes snijden en mee aanfruiten
  • Kruiden, tomatenpuree en Nduja toevoegen en alles nog even al roerend door verhitten.
  • Bouillonblokje, bonen en een scheutje water toevoegen en onder deksel 20 minuten laten sudderen. Ik gebruik hiervoor de Crockpot Express programma Manuel, lage druk 12 minuten.
  • Op smaak brengen.
  • Tortilla's in licht geoliede pan even aan beide zijden bakken.
  • Beleggen met de bonenbereiding, en kaas en dichtvouwen.
