Apple Pecan Farro Salad

Ingredients

  • 1 cup uncooked farro ((2 cups cooked))
  • 2 gala apples
  • ¼ cup pecan halves
  • 2 tablespoons dried cranberries
  • 3 cups spring mix salad
  • 4 tablespoons apple cider vinegar
  • 4 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • 1 tablespoon pure maple syrup
  • pinch of salt

Directions

  • 1. Cook farro according to package instructions and season with a pinch of salt. Let it cool to room temperature before using.
  • 2. In a large bowl, whisk together the dressing ingredients. Add in the farro and toss to coat in the dressing. Core and dice the apples and add to the farro, along with the dried cranberries, and pecans. Toss all together.
  • 3. Right before serving, add in the 3 cups of greens and toss to combine with the rest of the salad.
