Coconut Curry Chicken & Sweet Potato Poutine Fries

Ingredients
- 2 chicken breasts, diced
- 1 can coconut milk
- 2 tbsp red curry paste
- 1 sweet potato, cut into fries
- 1 cup cheese curds
- 2 tbsp flour
- 2 tbsp butter
- Salt and pepper to taste
- Green onions for garnish
Directions
- Preheat the oven to 400°F. In a large skillet, heat the butter over medium heat. Add the diced chicken breasts and cook until browned.
- Stir in the red curry paste and coconut milk, then bring to a simmer. Reduce heat and let cook for 10 minutes. In the meantime, toss the sweet potato fries in flour, salt, and pepper.
- Arrange them on a baking sheet and bake for 20-25 minutes, or until crispy. Once the chicken curry is cooked through, assemble the poutine by layering the sweet potato fries, cheese curds, and chicken curry on top.
- Garnish with sliced green onions
