Baked Stuffed Shrimp Casserole

Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons butter, melted
- 1 cup Ritz crackers, crushed
- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- 2 cloves garlic, minced
- 1/4 cup onion, finely diced
- 1/4 cup celery, finely diced
- 1/4 cup bell pepper, finely diced
- 1/2 cup mayonnaise
- 1/2 teaspoon paprika
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Directions
- Preheat the oven to 375°F. Lightly grease a casserole dish.
- In a skillet over medium heat, melt 1 tablespoon of butter. Add onion, celery, and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for 1 minute. Remove from heat.
- In a mixing bowl, combine sautéed vegetables, mayonnaise, lemon juice, Parmesan cheese, breadcrumbs, paprika, parsley, salt, and black pepper. Mix well to form the stuffing.
- Butterfly the shrimp by slicing them lengthwise down the back, being careful not to cut all the way through. Arrange the shrimp in the prepared casserole dish.
- Spoon the stuffing mixture over each shrimp, ensuring they are well covered. Sprinkle crushed Ritz crackers on top, followed by the melted butter.
- Bake in the preheated oven for 20-25 minutes, or until the shrimp are cooked through and the topping is golden brown.
- Serve hot, garnished with additional parsley and lemon wedges if desired.
