Baked Stuffed Shrimp Casserole

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons butter, melted
  • 1 cup Ritz crackers, crushed
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/4 cup onion, finely diced
  • 1/4 cup celery, finely diced
  • 1/4 cup bell pepper, finely diced
  • 1/2 cup mayonnaise
  • 1/2 teaspoon paprika
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Directions

  • Preheat the oven to 375°F. Lightly grease a casserole dish.
  • In a skillet over medium heat, melt 1 tablespoon of butter. Add onion, celery, and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for 1 minute. Remove from heat.
  • In a mixing bowl, combine sautéed vegetables, mayonnaise, lemon juice, Parmesan cheese, breadcrumbs, paprika, parsley, salt, and black pepper. Mix well to form the stuffing.
  • Butterfly the shrimp by slicing them lengthwise down the back, being careful not to cut all the way through. Arrange the shrimp in the prepared casserole dish.
  • Spoon the stuffing mixture over each shrimp, ensuring they are well covered. Sprinkle crushed Ritz crackers on top, followed by the melted butter.
  • Bake in the preheated oven for 20-25 minutes, or until the shrimp are cooked through and the topping is golden brown.
  • Serve hot, garnished with additional parsley and lemon wedges if desired.
