Pearl Couscous and Squash Cheese

Ingredients

  • 300g Squash
  • ½ cup Soya milk
  • ¼ cup Water
  • ⅛ cup Nutritional yeast
  • ¼ tsp Salt
  • ½ tsp Onion powder
  • ½ tsp Garlic powder
  • 1 ¾ cup Water
  • 1 ⅓ cup Israeli or Pearl couscous
  • Smoked paprika powder, for garnishing
  • Powdered vegan parmesan, for garnishing

Directions

  • Wash and peel squash, cut into cubes and boil for 10mins.
  • In a blender, mix the boiled squash with milk, water, nutritional yeast, and seasonings.
  • Pulse until smooth.
  • Add water if the mixture is too thick.
  • Boil 1 ¾ cup of water.
  • Add 1 ⅓ cup Israeli or Pearl couscous and cook for 12mins, or until water is absorbed.
  • Add couscous to the squash cheese and serve with powdered vegan parmesan and smoked paprika powder.
