Pearl Couscous and Squash Cheese

Ingredients
- 300g Squash
- ½ cup Soya milk
- ¼ cup Water
- ⅛ cup Nutritional yeast
- ¼ tsp Salt
- ½ tsp Onion powder
- ½ tsp Garlic powder
- 1 ¾ cup Water
- 1 ⅓ cup Israeli or Pearl couscous
- Smoked paprika powder, for garnishing
- Powdered vegan parmesan, for garnishing
Directions
- Wash and peel squash, cut into cubes and boil for 10mins.
- In a blender, mix the boiled squash with milk, water, nutritional yeast, and seasonings.
- Pulse until smooth.
- Add water if the mixture is too thick.
- Boil 1 ¾ cup of water.
- Add 1 ⅓ cup Israeli or Pearl couscous and cook for 12mins, or until water is absorbed.
- Add couscous to the squash cheese and serve with powdered vegan parmesan and smoked paprika powder.
