Sausage & Tortellini in Creamy Red Sauce-CC

Ingredients
- For the Sausage
- 3 Italian Sausage Links, cut into 1 inch pieces
- 1 tbsp Olive Oil
- 2 tsp Garlic Powder
- 1 tsp Ground Black Pepper
- 2 tsp Kosher Salt
- 2 tsp Paprika
- 1 tsp Onion Powder
- For the Tortellini
- 19 oz Bag of Frozen Tortellini
- 1/4 cup Kosher Salt
- 1 tbsp Butter
- For the Creamy Red Sauce
- 2 tbsp Jar Minced Garlic
- 1 & 1/2 cups Heavy Whipping Cream
- 1/2 cup Parmesan Cheese (shaker type)
- 4 tbsp Tomato Paste
- 1 tbsp Paprika
- 1 tsp Onion Powder
- 1 tsp Kosher Salt
- 1/2 tsp Ground Black Pepper
- 1 tbsp Dried Oregano
- 1 tbsp Butter
Directions
- Fill a large pot with water, add 1/4 cup kosher salt, and bring to a boil. Add the tortellini and cook according to package instructions. Drain, toss with 1 tbsp butter, and set aside.
- Heat a cast iron skillet over medium-low, add olive oil. Sauté sausage pieces until browned, about 10-15 minutes. Add garlic powder, black pepper, kosher salt, paprika, and onion powder halfway through. Remove sausage and set aside.
- In the same skillet, sauté minced garlic briefly, then pour in heavy cream, stirring to deglaze the pan. Simmer until thickened slightly.
- Stir in parmesan cheese until melted and combined, then whisk in tomato paste until smooth. Season with paprika, onion powder, salt, black pepper, and oregano.
- Return sausage to skillet, add cooked tortellini, and stir to coat in sauce. Finish with a tablespoon of butter, stir until melted and combined.
- Serve warm and enjoy!
