Sheet Pan Greek Chicken and Veggies

Ingredients
- 1 pkg Chicken Thighs
- 1 Lemon
- 4 Garlic cloves
- Dijon mustard
- 1 zucchini
- 1 yellow bell pepper
- 1 red onion
- cherry tomatoes
- crumbled goat or feta cheese
- Kalamata Olives
- Seasonings:
- - Thyme
- - Oregano
- - pepper
- - Cavenders Greek Seasoning
Directions
- *Pre heat oven to 400
- 1. Mix together Olive Oil, 1 squeezed lemon juice, 4 garlic cloves, Dijon mustard, thyme, oregano, pepper, and Cavender greek seasoning. Whisk together and add in chicken thighs and let marinate for 15-30 minutes.
- 2. While chicken is marinating. Cut up zucchini, yellow bell pepper, red onion, and cherry tomatoes. Add ll to pan. Drizzle with Olive Oil and season with Cavenders Greek Seasoning.
- 3. Add in chicken and cook for 30 minutes
- 4. Add crumbled goat or feta cheese and Kalamata olives. Let cook for 15 more minutes or until veggies are tender and chicken is fully cooked. Best served with my homemade Greek Yogurt Taziki sauce.
