Ingredients

  • 1lb chick pea pasta (any other pasta of choice)
  • 1/2 cup reserved pasta water
  • 2 lb chicken breast or tenders
  • 1 tbs cooking oil
  • 2 cup cherry tomatoes
  • 2tbsp pesto of choice
  • 2 tbs pine nuts
  • 1 tbs butter
  • ½ cup Grated Parmesan
  • 2-3 tbsp chopped parsley
  • Salt and pepper to taste
  • Chicken seasoning:
  • 1tbsp granulated garlic
  • 1/2 tbsp onion powder
  • 1 tbs Italian seasoning
  • 1 tsp sazon spice blend
  • 1/2 tsp salt
  • 1/4tsp pepper

Directions

  • Boil pasta as directed.
  • On a sheet tray, add cherry tomatoes, olive oil, salt and pepper. Bake at 375 for 20 minutes. Remove and set aside.
  • In a bowl add chicken seasoning. Turn heat to medium high. Add cooking oil and sauté chicken. Remove chicken and chop to desired size. Add chicken back to the same pan.
  • In a small pan add butter and pine nuts. Sauté until golden brown and set aside until ready to assemble.
  • Once pasta is finished cooking, add to pan with chicken. Add 1/2 cup of the that reserved pasta water and pesto. Stir until well combined. Add cherry tomatoes, pine nuts, Parmesan cheese and chopped parsley.
