Easy protein chicken pasta

Ingredients
- 1lb chick pea pasta (any other pasta of choice)
- 1/2 cup reserved pasta water
- 2 lb chicken breast or tenders
- 1 tbs cooking oil
- 2 cup cherry tomatoes
- 2tbsp pesto of choice
- 2 tbs pine nuts
- 1 tbs butter
- ½ cup Grated Parmesan
- 2-3 tbsp chopped parsley
- Salt and pepper to taste
- Chicken seasoning:
- 1tbsp granulated garlic
- 1/2 tbsp onion powder
- 1 tbs Italian seasoning
- 1 tsp sazon spice blend
- 1/2 tsp salt
- 1/4tsp pepper
Directions
- Boil pasta as directed.
- On a sheet tray, add cherry tomatoes, olive oil, salt and pepper. Bake at 375 for 20 minutes. Remove and set aside.
- In a bowl add chicken seasoning. Turn heat to medium high. Add cooking oil and sauté chicken. Remove chicken and chop to desired size. Add chicken back to the same pan.
- In a small pan add butter and pine nuts. Sauté until golden brown and set aside until ready to assemble.
- Once pasta is finished cooking, add to pan with chicken. Add 1/2 cup of the that reserved pasta water and pesto. Stir until well combined. Add cherry tomatoes, pine nuts, Parmesan cheese and chopped parsley.
