Smoked Mac & Cheese

Cook time: 2 hours 15 mins

Ingredients

  • 2 cups macaroni noodles (or a noodle of your choosing)
  • 1/2 stick salted butter-melted
  • 3 cups milk (1 or 2%)
  • 2 cups heavy whipping cream
  • 16 ounce shredded colby cheese
  • 8 ounce shredded pepper jack cheese
  • Optional toppings:
  • Mexican cheese shredded
  • bread crumbs
  • Bacon or bacon bits

Directions

  • 1.) Set pellet grill at 250.
  • 2.) Mix all ingredients together (minus extra ingredients) in a 9x13 pan.
  • 3.) Smoke for approximately 2 hours mixing every 30 mins.
  • 4.) Raise the temp to 400* and cook for another 8-10 minutes until the top is light brown.
  • 5.) Remove from grill and add optional toppings as desired.

Notes

  • Mixed the ingredients and put it on the grill @ 15:50
  • Stirred at 16:20, 16:50 and 17:22.
  • Stirred @ 17:52 and raised the temp to 400*, cooking for an additional 10 minutes.
  • Amazing...
  • Next time I'll try adding bacon bits into the mac & cheese during the 3rd stir.
