Smoked Mac & Cheese

Ingredients
- 2 cups macaroni noodles (or a noodle of your choosing)
- 1/2 stick salted butter-melted
- 3 cups milk (1 or 2%)
- 2 cups heavy whipping cream
- 16 ounce shredded colby cheese
- 8 ounce shredded pepper jack cheese
- Optional toppings:
- Mexican cheese shredded
- bread crumbs
- Bacon or bacon bits
Directions
- 1.) Set pellet grill at 250.
- 2.) Mix all ingredients together (minus extra ingredients) in a 9x13 pan.
- 3.) Smoke for approximately 2 hours mixing every 30 mins.
- 4.) Raise the temp to 400* and cook for another 8-10 minutes until the top is light brown.
- 5.) Remove from grill and add optional toppings as desired.
Notes
- Mixed the ingredients and put it on the grill @ 15:50
- Stirred at 16:20, 16:50 and 17:22.
- Stirred @ 17:52 and raised the temp to 400*, cooking for an additional 10 minutes.
- Amazing...
- Next time I'll try adding bacon bits into the mac & cheese during the 3rd stir.
