Ingredients

  • 2 cans of corn, drained
  • 1 can of hatch green chiles
  • 1 cream cheese block at room temp
  • ½ cup mexican Mayo with lime
  • ⅓ cup Crema or sour cream
  • 2 cups Mexican blend cheese
  • 1 lime
  • Toppings:
  • Cojita cheese
  • Tajin
  • Lime juice
  • Hot sauce
  • Cilantro

Directions

  • 1. In a bowl whip together cream cheese, Mayo, and crema until smooth.
  • 2. Add drained corn, green chiles, cheese, and one half of the lime and mix to combine.
  • 3. Spread mixture evenly into a casserole pan (12x11) cover with foil and bake at 350 for 20 minutes.
  • 4. Let cool for 5 minutes and then top with cojita cheese, tajin, hot sauce, cilantro and extra lime. Serve with chips and enjoy.
