Bok Choy & Mushroom Stir Fry

Ingredients
- 2 tablespoons sesame oil
- 4 cups bok choy, washed and sliced
- 2 cups assorted mushrooms, such as shiitake or cremini, sliced
- 1 red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Sesame seeds for garnish
- Green onions, sliced for garnish
Directions
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the mushrooms and bell pepper, stir-frying until they begin to soften, about 3-4 minutes.
- Add the bok choy, garlic, and ginger to the skillet. Continue to stir-fry until the bok choy is wilted and the garlic is fragrant, about 2 minutes.
- Stir in the soy sauce, oyster sauce, and sugar, mixing well to coat the vegetables.
- Pour in the cornstarch mixture and stir until the sauce thickens and becomes glossy, about 1 minute.
- Serve the stir fry immediately, garnished with sesame seeds and green onions.
