Bok Choy & Mushroom Stir Fry

Ingredients

  • 2 tablespoons sesame oil
  • 4 cups bok choy, washed and sliced
  • 2 cups assorted mushrooms, such as shiitake or cremini, sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Sesame seeds for garnish
  • Green onions, sliced for garnish

Directions

  • Heat the sesame oil in a large skillet or wok over medium-high heat.
  • Add the mushrooms and bell pepper, stir-frying until they begin to soften, about 3-4 minutes.
  • Add the bok choy, garlic, and ginger to the skillet. Continue to stir-fry until the bok choy is wilted and the garlic is fragrant, about 2 minutes.
  • Stir in the soy sauce, oyster sauce, and sugar, mixing well to coat the vegetables.
  • Pour in the cornstarch mixture and stir until the sauce thickens and becomes glossy, about 1 minute.
  • Serve the stir fry immediately, garnished with sesame seeds and green onions.
