Chicken Cilantro Avocado Bowl

Ingredients
- Chicken:
- -2 tbsp avocado oil
- -1 lime, zested and juiced
- -2 tbsp cilantro, chopped
- -1/4 tsp salt
- -1/4 tsp pepper
- -2 lbs chicken breast
- Avocado cream:
- -1 avocado
- -juice from 1 lime
- -2 tbsp avocado oil
- -1 tsp garlic powder
- - s&p to taste
- -1-2 tbsp water
- Cauliflower rice:
- -1 bag riced cauliflower
- -t tbsp avocado oil
- -1 handful cilantro chopped
- -s&p to taste
Directions
- Chicken:
- In a large ziplock, combine avocado oil, lime zest, lime juice, chopped cilantro, s&p.
- Place chicken breast between 2 sheets of parchment paper and flatten. Put in ziplock, shake. place in fridge for at least 15min.
- Avocado cream:
- Place all ingredients into a food processor, blend until smooth and creamy. Use 1 or 2 tbsp of water depending on desired thickness. Should be a thick and creamy dressing.
- Cauliflower rice:
- Place in large skillet. Add chopped cilantro, avocado oil, s&p. Cook 5min.
- Back to chicken:
- Grease skilet with avocado oil, cook cicken 6min each side.
