Chicken Cilantro Avocado Bowl

Ingredients

  • Chicken:
  • -2 tbsp avocado oil
  • -1 lime, zested and juiced
  • -2 tbsp cilantro, chopped
  • -1/4 tsp salt
  • -1/4 tsp pepper
  • -2 lbs chicken breast
  • Avocado cream:
  • -1 avocado
  • -juice from 1 lime
  • -2 tbsp avocado oil
  • -1 tsp garlic powder
  • - s&p to taste
  • -1-2 tbsp water
  • Cauliflower rice:
  • -1 bag riced cauliflower
  • -t tbsp avocado oil
  • -1 handful cilantro chopped
  • -s&p to taste

Directions

  • Chicken:
  • In a large ziplock, combine avocado oil, lime zest, lime juice, chopped cilantro, s&p.
  • Place chicken breast between 2 sheets of parchment paper and flatten. Put in ziplock, shake. place in fridge for at least 15min.
  • Avocado cream:
  • Place all ingredients into a food processor, blend until smooth and creamy. Use 1 or 2 tbsp of water depending on desired thickness. Should be a thick and creamy dressing.
  • Cauliflower rice:
  • Place in large skillet. Add chopped cilantro, avocado oil, s&p. Cook 5min.
  • Back to chicken:
  • Grease skilet with avocado oil, cook cicken 6min each side.
