Susan’s New Pumpkin Chili

Ingredients

  • 2 lbs ground beef (ITW is best)
  • 3 cups Onion, chopped
  • 1 cup green pepper, chopped
  • 2 garlic cloves, minced
  • 2 15 oz cans diced tomatoes, undrained
  • 15 oz can pumpkin
  • 2 15 oz can pinto beans
  • 15 oz can tomato sauce
  • 4 oz Can green Chiles
  • 11 oz can Mexicorn, drained
  • 1½ tbsp chili powder
  • 1 ½ tsp Cumin
  • 1tsp pepper
  • Green onion, chopped for garnish

Directions

  • Cook the ground beef and drain well. Set aside. In a large pot, sauté the onion, green pepper and garlic over medium to low heat in olive oil until soft. Add tomatoes, pumpkin, pinto beans, tomato sauce, chilies,Mexicorn, and spices. Add beef. Stir and simmer on low heat for at least one hour. Chili can simmer on low on stove top for several hours. The chili will be very thick. Feel free to add water if necessary for desired consistency.
