Pastrami & Sauerkraut Rolls

- 6 sandwich rolls or hoagie buns
- 1 lb pastrami, thinly sliced
- 1 cup sauerkraut, drained
- 6 slices Swiss cheese
- ¼ cup spicy mustard or Thousand Island dressing optional
- 2 tbsp butter, melted

- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- Slice the sandwich rolls in half lengthwise, but don’t cut all the way through.
- Spread a thin layer of mustard or Thousand Island dressing on the inside of each roll, if using.
- Layer pastrami, sauerkraut, and a slice of Swiss cheese into each roll.
- Brush the tops of the rolls with melted butter and place them on the prepared baking sheet.
- Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and the rolls are lightly toasted. Serve warm
