Green Pea & Potato Curry

Ingredients

  • 3 large potatoes, diced
  • 1 ½ cups frozen peas
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, minced
  • 2 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • ½ tsp chili powder
  • Salt, to taste
  • 1 cup vegetable broth
  • Cilantro for garnish

Directions

  • Sauté cumin seeds and onions in oil.
  • Stir in garlic, ginger, tomatoes, and spices.
  • Add potatoes and broth, simmer 20 mins.
  • Mix in peas, cook 5 mins. Garnish.
