Mom's Homemade chicken broth aka "Liquid Gold"

Ingredients
- 12-14 organic chicken drumsticks (about 3.50 - 4 lbs)
- 1.5 tsp Himalayan pink salt
- 16 cups filtered water
Directions
- 1. In a large stockpot, add drumsticks, salt and water.
- 2. On high heat, bring water to boil. Allow 15-20 minutes for water to come to a boil.
- 3. Once boiling, lower heat to low heat setting so the water is simmering (occasional small bubbles).
- 4. Skim off and discard any foam that has formed at the top.
- 5. Simmer for 60 minutes.
- 6. After 60 minutes, remove all drumsticks and place in a large storage bowl with lid (4 quarts) that will be used to store the broth.
- Note: If making chicken soup, remove all drumsticks
- 7. Allow about 10 minutes for the drumsticks to cool.
- 8. After about 10 minutes, (the drumsticks should be cool enough to handle), remove the meat and place the meat in a smaller storage bowl.
- 9. Once the meat is cool enough (15-20 min), store in refrigerator.
- Note: If not using meat within 2 days, store in freezer.
- 10. Place the bones, skin and any other non-meat parts back into the pot of water.
- 11. If needed, adjust the heat setting on the pot to maintain a simmer.
- 12. Continue to simmer for 60 minutes.
- 13. After 60 minutes, turn off heat and remove pot from heat.
- 14. For the broth to cool faster, remove the bones from the pot and discard them.
- 15. On top of a large storage bowl, place a large fine mesh strainer on top and pour the broth through the strainer.
- 16. Once the broth is cool, place in fridge for about 2 hours or overnight.
- 17. Skim off the yellowish fat and discard.
- 18. Broth is ready for consuming or using in recipes.

Notes
- Drink chicken broth for:
- 1. Strengthens the gut lining. A strong gut lining helps keep the toxins from entering the bloodstream.
- 2. Collagen - during cold months when the air is dry, it can dry the skin and cause irritated skin (i.e. eczema, dry, itchy, cuts). The broth will help restore moisture to the skin.
- 3. Energy - Broth is food for the soul. If feeling sluggish (especially in March when DST begins), drink broth to boost energy.
- 4. Immunity - Broth is food for the soul. It can boost immunity and nourish the body when not feeling well or loss of appetite (i.e. cold, upset stomach).
