Chifteluțe cu Piure - Meatballs w/ Mashed Potatoes

Ingredients

  • For the Meatballs (Chifteluțe)
  • 1 pound ground pork
  • 1/2 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste
  • 1 tablespoon vegetable oil
  • For the Mashed Potatoes (Piure)
  • 3-4 large potatoes, peeled and chopped
  • 1/4 cup milk or water
  • 2 tablespoons butter
  • Salt to taste

Directions

  • Meatballs (Chifteluțe)
  • In a large bowl, combine ground pork, ground beef, onion, garlic, egg, breadcrumbs, parsley, salt, and pepper. Mix well with your hands until just combined.
  • Shape into small meatballs, about 1 1/2 inches in diameter.
  • Heat the oil in a large skillet over medium heat. When hot, add the meatballs and cook until browned on all sides, about 5-7 minutes.
  • Remove the meatballs from the skillet and set aside.
  • Mashed Potatoes (Piure)
  • Boil the chopped potatoes in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Add butter, salt, and milk, and mash until smooth and creamy.
  • Serve
  • Serve the meatballs with mashed potatoes and your favorite gravy or sauce.
