Pineapple upside-down cake GF

Ingredients

Directions

  • Makes 12 muffins or half a 9” round cake. (Can use other half of batter to have a plain layer but would need more topping with crushed pineapple, or muffins or a sheet cake)
  • King Arthur GF yellow cake mix recipe (can use pillsbury):
  • Melt 4Tbl butter and 1/3 cup coconut sugar (or brown)
  • Optional: 1/4 tsp ginger and cinnamon
  • Pour into pan
  • Drain and save pineapple juice from a 20oz can
  • Place pineapple rings all around and a cherry in each center
  • Optional: Put chopped pecans in open spots
  • Follow cake mix directions but sub pineapple juice from can (can also sub cream cheese for butter)
  • Pour in half the batter and bake at 350 for 40 minutes (toothpick comes out clean or internal temp 210degF) (or follow cake mix directions), muffins could bake in 20-25 minutes
  • Flip onto serving plate, allow pan to sit upside down for 10 minutes, and allow to cool before slicing
  • Serve with vanilla ice cream

Notes

  • Very pretty- Awesome for guests, a party, or a pot luck
