🥖 Classic Liver Pâté

Ingredients
- 1 lb chicken livers (or calf’s liver), cleaned
- 1 small onion, chopped
- 2 cloves garlic, minced
- ½ cup butter (divided)
- ¼ cup cream or coconut cream
- 2 Tbsp brandy or sherry (optional, but yum)
- Salt, pepper, pinch of thyme
Directions
- Sauté onion and garlic in 2 Tbsp butter until soft.
- Add livers and cook until just pink inside (don’t overcook).
- Deglaze with brandy/sherry, let it sizzle off.
- Blend with remaining butter, cream, and seasonings until silky smooth.
- Chill in ramekins, top with melted butter to seal.
- → Spread on crackers, sourdough, or cucumber slices.
