Ingredients
- 1 cup dried green or brown lentils, rinsed and drained
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 slices smoked ham or sausage (such as kielbasa), diced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 can diced tomatoes
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Directions
- In a large pot, sauté the onion, garlic, smoked meat, carrot, and celery in a little oil until the vegetables are tender.
- Add the lentils, vegetable broth, and diced tomatoes. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat and simmer for 30-40 minutes or until the lentils are tender.
- Serve hot, garnished with chopped parsley if desired.
