Small Batch Sourdough Bagel

Ingredients
- 100 g Bread Flour
- 55 g Water
- 25g Sourdough Starter (if using discard add ½ tsp active dry yeast)
- 2g Sea Salt
- ½ tsp honey
- For cheddar everything bagels add 1/4 shredded cheese during initial mix.
Directions
- Mix, let rest for 15 minutes.
- Knead till smooth. Let rest for 60-90 minutes. Shape and let rest for 30 min or cold proof in fridge (tightly covered) over night.
- Boil n bake:
- Boil in water with 1 tsp each molasses and baking soda. 1 minute each side.
- Place on cooling rack to dry up a bit. Top with desired seasoning. Then bake on 425° for 18-20 minutes. They should reach 210° internally.
Notes
- Egg wash certian inclusions including: cinnimon sugar, everything bagel seasoning, plain
- Cheese wasn't necessary to egg wash.
- Will add cheese before everything bagel seasoning. Soo good!
