Protein mousse

Ingredients

  • - 1 egg
  • - 10 g cocoa
  • - 15 g protein powder
  • - 10 g erythritol (or other sweetener)
  • - 10 g 80% melted dark chocolate (optional)
  • - orange zest (optional)

Directions

  • Pasteurize the egg in a pan.
  • Separates the egg yolk from the egg white. Add the cocoa, protein powder, dark chocolate and erythritol (sweetener) to the egg yolk.
  • Beat the egg whites until stiff with a hand blender.
  • Add the egg white to the chocolate mixture spoon by spoon. Stir until combined, but not too long. The bubbles that have formed must remain inside so that it remains airy.
  • Put it in a nice chic glass and let it set in the refrigerator for at least one hour.
  • Serve with, for example, an orange slice and some orange zest
  • Enjoy
