Marinated Mushrooms

Ingredients
- 1/2 c. olive oil
- 3 tbsp. white wine vinegar
- 2 tbsp. lemon juice
- 1 tbsp. maple syrup
- 2 tbsp. chopped flat-leaf parsley
- 2 tbsp. chopped dill
- Kosher salt
- Pepper
- 1 lb. cremini mushrooms, thinly sliced
Directions
- 1. In large bowl, whisk together oil, vinegar, lemon juice, maple syrup, parsley, dill, and 1/2 teaspoon each salt and pepper. Add mushrooms and gently toss to combine.
- 2. Let sit at room temp, tossing occasionally until tender, at least 1 hour. Transfer to jars and store in refrigerator up to 3 days.
