Roasted cauliflower steaks with lemon tahini sauce

- - 1 large head of cauliflower, cut into thick steaks
- - 2 tablespoons olive oil
- - 1 teaspoon smoked paprika
- - 1/2 teaspoon cumin
- -Salt and pepper to taste
- - Fresh parsley for garnish
- Garlic Tahini Sauce:
- - 1/4 cup tahini
- - 2 tablespoons lemon juice
- - 1 garlic clove, minced
- - 1 tablespoon olive oil
- - Water to thin

- 1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- 2. Brush the cauliflower steaks with olive oil and season with smoked paprika, cumin, salt, and pepper on both sides.
- 3. Roast the cauliflower for 25-30 minutes, flipping halfway through, until golden and crispy on the edges.
- 4. While the cauliflower is roasting, whisk together the tahini, lemon juice, minced garlic, olive oil, and water until smooth.
- 5. Drizzle the roasted cauliflower steaks with garlic tahini sauce and garnish with fresh parsley before serving.
