Tuna Pasta Bake

Ingredients
- 250g pasta of choice
- 1 pack fresh basil
- 1 courgette, diced
- 1 red pepper, chopped
- 2 medium carrots, grated
- 1 white onion, diced
- 680g passata
- 1 tbsp tomato and garlic puree
- 1 chicken stock cube
- 1 tbsp balsamic vinegar
- 2 tins tuna, drained
- 40g Parmesan cheese, grated
Directions
- Preheat oven to 200°C fan. Precook pasta, removing 2 minutes early, rinse with cold water, and set aside.
- Sweat the onion in olive oil and salt for 5 minutes. Add the rest of the vegetables and chopped basil stems. Sweat for 5-10 minutes.
- Add passata, tomato puree, garlic puree, black pepper, and the stock pot. Simmer until slightly thickened.
- Add fresh basil, balsamic vinegar, and tuna. Mix in the pasta and pour into a baking dish.
- Top with Parmesan and bake for 10-15 minutes until golden brown.

- Super lekker, geen zware tonijn smaak!
