Dark Chocolate Brownies

Ingredients
- 2 cups Dark Chocolate chips, divided
- 1 cup light brown sugar
- 1/3 cup butter, cut into pieces
- 2 Tbsp. water
- 2 large eggs
- 1 tsp. vanilla extract
- 3/4 cup all-purpose flour
- 1/4 tsp. salt
- 1 tsp espresso powder
Directions
- Preheat oven to 325°F
- Line an 8-inch-square baking pan with foil and grease.
- Set aside 1/2 cup chocolate chips
- In a small saucepan over low heat, heat 1 1/2 cups chocolate chips, sugar, butter and water, stirring constantly, until chocolate and butter are melted. Pour into mixer bowl
- Add eggs and vanilla extract- beat for 3 minutes at medium speed.
- Add flour, salt, and espresso powder - mix until just blended, then mix in the remaining 1/2 cup chocolate chips.
- -Pour into prepared baking pan Bake for 30 to 35 minutes or until wooden pick inserted in center comes out slightly sticky. Cool in pan on wire rack Cut into bars Makes 16 brownies
Notes
- If these are too rich don’t use the espresso powder. I sometime throw in chopped Oreos and white chocolate chips for fun.
